As you walk into ST Stephane Treand Patisserie Chocolat, you may find Chihiro Fujikawa behind the counter. A name that may sound familiar, or just one that you can’t forget. It’s embroidered on her chef jacket, she’s as sweet as she looks. Chihiro and her husband Stephane are not newbies to the pastry world as their resumes include titles such a “Executive Pastry Chef” at top 5 Star Luxury Hotels in Orange County; Four Seasons Newport Beach, St. Regis Monarch Beach and Montage Laguna Beach. Prior to, Stephane studied and taught pastry in France, achieved the title of M.O.F., (Meilleur Ouvrier de France) “Best Craftman in France” in 2004. The title of M.O.F. is the highest honor given by the President of France to a professional in an individual trade. The power team have recently opened up a boutique Parisian pastry and confection shop located amongst an eclectic array of shops and wonders in the SoCo Collection shopping center in Costa Mesa. Made with the finest ingredients, using traditional and modern techniques, the desserts taste as great as they look, not super sweet, but with delicate flavor.
You might want to stop by before lunch as most likely the chocolate croissants will be sold out. If they are, I suggest, the macaron brioche or the caramel brioche with chocolate. Inside the pastry case, feast your eyes on the Duo Feuilletine which is almond cake of praline and chocolate cream, or if you prefer fruit, try the Pear tart with almond cream. If you ask Chihiro what she thinks is Chef’s favorite, she replies “exotic” a dome shaped pastry of Passion fruit vanilla mousse and coconut.
